Many years ago we took our first, and only (due to the cost of such adventures), family vacation. Some very kind friends of ours let us borrow their cottage by the lake, and we went for two days. It was so lovely, that little lake and the sound of the loons in the dark, dark night. My children played with the frogs, and we all slept soundly and restfully.
One of the meals we brought with us that weekend was pizza, probably the one food no one ever tires of; don’t you agree? And it’s very easy to make. Here’s a simple and truly delicious crust for you to try. We like ours topped with mushrooms, or green peppers and onions.
Easy Pizza Crust
(For one large pizza)
4 cups flour
1-1/2 cups warm water
2 Tbsp. olive oil
1 tsp sugar
2-1/4 tsp. instant dry yeast
2 tsp. salt (kosher works best)
Combine all ingredients and shape into a ball. Cover and let rise, in a warm place, for one hour. (If you like, add fresh or dried herbs to the crust before forming into a ball.) This crust does not need to be baked before being topped with your favorite ingredients and set in the oven.
