I try to be flexible and open-minded about a lot of things, but not the name of the greatest singer who ever lived. That would be Frank Sinatra, of course.
There are some Frank Sinatra songs I’ve heard at least 1,000 times, and they still take my breath away. This is one of them. So you can imagine how happy I was when I found an old cookbook with this recipe. The sauce works well for tofu, too, for the vegetarians in your family.
Italian Chicken, Potatoes and Onions
(A favorite of Frank Sinatra)
1 whole chicken, cut into pieces
8 large potatoes, quartered
2 onions, thinly sliced
2 Tbsp. oregano
1 cup parsley, chopped
Salt and pepper to taste
¼ cup olive oil
Cut chicken and cook in boiling water and 2 tsp. salt for 30 minutes.
Put olive oil in bottom of a large pan. Remove chicken from water and put in pan. Put sliced onion on top, then add potatoes, salt and pepper. Add oregano and parsley and mix everything together.
Cook at 350-degrees for about 1 hour, or until potatoes and chicken are thoroughly cooked. Stir frequently.
